Remove from frying pan and drain on paper towels.Fry until brown on one side then flip over to brown the other side. When ready, drop batter by large spoonfuls to form oval shapes.Heat oil in frying pan over medium high heat.Add flour or matzo meal, baking powder, and seasonings and mix them well.Beat eggs and egg whites until thick and add them to potatoes and onions.Transfer to large mixing bowl and add the onions.Pour cold water over them and press out liquid once more. Put potatoes in a large strainer and press out liquid.Shred them both with a grater or with the shredding blade of food processor. (If you’re not using them immediately, stick in cold water.)
